The Cookie Cart is a nonprofit bakery organization that teaches business skills to at risk youth in north Minneapolis. This wall-to-wall remodel of their space would allow for a more efficient kitchen layout and will connect the students working in the bakery to the front of the store - bringing life to the cafe and engaging the streetscape.

I was involved on this project from design development to bid documents. I became familiar with details of the design by tracking many changes throughout the drawing set and field verifying critical areas. I also aided in the creation of presentation graphics that were used in client meetings to discuss the remodel of their space for board approval.

The renovation was a complete wall-to-wall floor-to-ceiling remodel saving only primary structure and exterior walls. The cafe was enlarged and further opened up to the public by adding cafe seating and a proper sales counter. The floating wedge under the cafe became a focal point and can be seen here in section.
